The physical and chemical composition of buffalo milk has been studied in different countries. In our country, the articles on physic and chemical composition of buffalo milk are scarce. The water buffalo is native to Asia, the species Bubalus bubalis sp, includes 19 races. Currently, the world buffalo population is around 170 million head, and Asia is the continent has the largest number of buffalo. In the Asia, India, Pakistan and China are representative. This study was designed to determine the physic-chemical composition of the female buffalo (Bubalus bubalis) milk. Between January and February 2010, milk samples coming from 2 female buffalo of a dairy establishment settled in Khuzestan province, were analyzed lacto densitometers density, acidometers of Dornic acidity, fat by Gerber butyrometer method, protein by micro-Kjeldahl method, total solids by the direct method, lactose by the polar metric method, pH by potentiometer and ash by incineration in a muffle furnace. The same is located in a region of dry and humid climate with low annual rainfall, temperature and humidity of 41, 5° C and 75% respectively. Found mean records were: Density 1,026 ± 0,003 g/ml; Acidity 19,00 ± 1,41°; pH 6,90 ± 0,0; total solid matter 18.42 ± 0,16 %; Fatty 8,80 ± 0,28 %; Protein 5,20 ± 0,14 %; Lactose 4,55 ± 0,0 % and ashes 0,78 ± 0,03 %. Results were compared with those obtained by the authors. By comparing the results of this study with those described by other authors state that the average values of the chemical constituents: total solids, fat, protein and ash, are above the ranges established for them.
