چکیده

Introduction: The risks of human and animal diseases caused by milk and dairy products are major public health concerns. This study investigates the microbial contamination of coliform bacteria in raw milk and traditional dairy products in Ilam city. Methods: In order to collect data, 100 samples including 47 raw milk samples, 28 local cheese samples, 8 butter samples and 17 local yogurt samples were collected. Results: The results showed that more than 53% of the samples had total coliform counts higher than the permissible limit set in the Iranian national standard. These findings indicate serious deficiencies in observing hygiene principles in the production, transportation and storage processes of traditional dairy products in the region. Molecular analysis showed that a high percentage of Escherichia coli isolates had pathogenic genes such as eae, stx1 and stx2, which are known as dangerous markers associated with intestinal diseases. Overall conclusion: Based on the results obtained from the present study, it can be concluded that the level of microbial contamination with coliforms in a significant part of raw milk and traditional dairy products in Ilam city was higher than the permissible national standard limit, so that more than half of the samples showed an unacceptable coliform count. Isolation and phenotypic and molecular identification showed that Escherichia coli was the most common isolated coliform bacteria and the presence of Klebsiella pneumoniae was also confirmed in a number of samples, while coliform contamination was not observed in traditional butter samples.
